Mediterranean Chickpea & Feta Salad

A fresh, plant-based salad packed with flavour and nutrients.
Simple Mediterranean ingredients that support digestion, energy, and satisfaction without feeling heavy.

Ingredients (1 serving)

Base:

  • ½ can chickpeas (drained & rinsed)

Fresh veg:

  • Handful cherry tomatoes (halved)

  • ½ cucumber (chopped)

  • ¼ red onion (finely sliced)

Extras:

  • 30g feta cheese

  • 1 tbsp olives (optional)

  • Fresh parsley or mint

Dressing:

  • 1 tbsp olive oil

  • Juice of ½ lemon

  • Pinch of salt & pepper

Instructions

  1. Rinse and drain the chickpeas.

  2. Chop all vegetables.

  3. Combine everything in a bowl.

  4. Crumble feta on top.

  5. Drizzle with olive oil and lemon juice.

  6. Mix gently and serve.
