Smashed Avocado & Eggs on Toast

Ingredients (1 serving)

  • 1–2 slices wholegrain or sourdough bread

  • ½ ripe avocado

  • 2 eggs (poached, boiled, or scrambled)

  • ½ lemon (juice)

  • Pinch of salt & black pepper

  • Optional: chilli flakes or paprika

  • Optional: drizzle of olive oil

Optional Add-ons

  • Cherry tomatoes (freshness + vitamin C)

  • Spinach or rocket (extra greens)

  • Smoked salmon (for omega-3 boost)

  • Feta cheese (Mediterranean twist ✨)

Instructions

  1. Toast the bread to your liking.

  2. Mash the avocado with lemon juice, salt, and pepper.

  3. Cook the eggs (poached works beautifully here).

  4. Spread the avocado over the toast.

  5. Add the eggs on top.

  6. Finish with chilli flakes or olive oil if desired.
