Wholegrain Pasta with Chicken & Vegetables

A simple, balanced dinner that’s easy to prepare and satisfying without feeling too heavy.

Ingredients (1 serving)

  • 60–70g wholegrain pasta

Protein:

  • 1 small chicken breast (or leftover chicken)

Vegetables:

  • Handful spinach

  • Handful cherry tomatoes

  • ½ courgette (optional)

Flavour:

  • 1 tbsp olive oil

  • 1 garlic clove (optional)

  • Salt & black pepper

Instructions

  1. Cook pasta according to instructions.

  2. Cook chicken in a pan and slice.

  3. In the same pan, sauté garlic, tomatoes, and courgette.

  4. Add spinach and let it wilt.

  5. Mix pasta with vegetables and chicken.

  6. Drizzle olive oil and season.
