Mediterranean Baked Salmon & Veg
A simple, flavourful dinner inspired by Mediterranean ingredients.

Ingredients (1–2 servings)
Protein:
1 salmon fillet
Vegetables:
½ courgette (sliced)
Handful cherry tomatoes
¼ red onion (sliced)
Extras:
1 tbsp olives
1 tbsp olive oil
Juice of ½ lemon
½ tsp oregano or mixed herbs
Salt & black pepper
Instructions
Preheat oven to 180–200°C.
Place vegetables in a baking tray.
Add salmon on top.
Drizzle olive oil and lemon juice.
Sprinkle herbs, salt, and pepper.
Bake for 15–20 minutes until salmon is cooked.
