Mediterranean Baked Salmon & Veg

A simple, flavourful dinner inspired by Mediterranean ingredients.
Balanced, nourishing, and perfect for a calm, satisfying evening meal.

Ingredients (1–2 servings)

Protein:

  • 1 salmon fillet

Vegetables:

  • ½ courgette (sliced)

  • Handful cherry tomatoes

  • ¼ red onion (sliced)

Extras:

  • 1 tbsp olives

  • 1 tbsp olive oil

  • Juice of ½ lemon

  • ½ tsp oregano or mixed herbs

  • Salt & black pepper

Instructions

  1. Preheat oven to 180–200°C.

  2. Place vegetables in a baking tray.

  3. Add salmon on top.

  4. Drizzle olive oil and lemon juice.

  5. Sprinkle herbs, salt, and pepper.

  6. Bake for 15–20 minutes until salmon is cooked.
