Mediterranean Chicken Nourish Bowl

Ingredients (1 serving)
Base:
50g quinoa (or brown rice)
Protein:
1 grilled chicken breast
Vegetables:
Handful cherry tomatoes (halved)
½ cucumber (chopped)
Handful rocket or spinach
Extras:
30g feta cheese
1 tbsp olives
Dressing:
1 tbsp olive oil
Juice of ½ lemon
Pinch of salt & black pepper
Instructions
Cook the quinoa according to packet instructions and allow to cool slightly.
Grill or pan-cook the chicken until fully cooked, then slice.
Prepare and chop all vegetables.
Assemble your bowl: quinoa → greens → vegetables → chicken → feta & olives.
Drizzle with olive oil and lemon juice.
