Mediterranean Chicken Nourish Bowl

Ingredients (1 serving)

Base:

  • 50g quinoa (or brown rice)

Protein:

  • 1 grilled chicken breast

Vegetables:

  • Handful cherry tomatoes (halved)

  • ½ cucumber (chopped)

  • Handful rocket or spinach

Extras:

  • 30g feta cheese

  • 1 tbsp olives

Dressing:

  • 1 tbsp olive oil

  • Juice of ½ lemon

  • Pinch of salt & black pepper

Instructions

  1. Cook the quinoa according to packet instructions and allow to cool slightly.

  2. Grill or pan-cook the chicken until fully cooked, then slice.

  3. Prepare and chop all vegetables.

  4. Assemble your bowl: quinoa → greens → vegetables → chicken → feta & olives.

  5. Drizzle with olive oil and lemon juice.
