Spiced Chicken & Roasted Veg Bowl

Ingredients (1 serving)
Base:
1 small sweet potato (cubed)
Protein:
1 chicken breast
Vegetables:
Handful broccoli or courgette
Β½ red pepper
Seasoning:
1 tsp paprika
Β½ tsp cumin
1 tbsp olive oil
Salt & black pepper

Preheat oven to 200Β°C.
Place sweet potato and vegetables on a tray.
Drizzle with olive oil, paprika, cumin, salt, and pepper.
Roast for 20β25 minutes until tender.
Season and cook the chicken (pan or oven) with the same spices.
Slice the chicken and serve over the roasted vegetables.
