Simple Vegetable & Egg Drop Soup

A warm, light soup that’s easy to digest and perfect for the evening.

Ingredients (1 serving)

  • 400ml vegetable or chicken stock

  • 1 egg

  • Handful spinach

  • ½ carrot (thinly sliced)

  • ½ tsp grated ginger (optional)

  • 1 tsp olive oil

  • Pinch of salt & black pepper

Instructions

  1. Heat the stock in a small pot.

  2. Add carrot and cook for 5–7 minutes until soft.

  3. Add spinach and let it wilt.

  4. Beat the egg and slowly pour it into the soup while stirring gently.

  5. Drizzle olive oil and season to taste.
