One-Pan Creamy Chicken & Vegetables

Ingredients (1–2 servings)

Protein:

  • 1–2 chicken breasts

Vegetables:

  • Handful mushrooms

  • Handful spinach

  • ½ courgette (optional)

Sauce:

  • 100ml light cream or crème fraîche

  • 1 tbsp olive oil

  • 1 garlic clove (optional)

  • Salt & black pepper

Instructions

  1. Heat olive oil in a pan and cook chicken until golden.

  2. Remove and set aside.

  3. In the same pan, cook garlic, mushrooms, and courgette.

  4. Add cream and simmer gently.

  5. Return chicken to the pan and add spinach.

  6. Cook until everything is tender and combined.
