Hearty Lentil & Vegetable Stew

Ingredients (2 servings)
100g lentils (green or brown)
1 carrot (chopped)
1 celery stick
½ onion (chopped)
1 small potato (optional, cubed)
500ml vegetable stock
1 tbsp olive oil
½ tsp paprika or cumin
Salt & black pepper
Instructions
Heat olive oil and cook onion, carrot, and celery.
Add lentils, spices, and stock.
Simmer for 25–30 minutes until lentils are soft.
Season and serve warm.
