Hearty Lentil & Vegetable Stew

Ingredients (2 servings)

  • 100g lentils (green or brown)

  • 1 carrot (chopped)

  • 1 celery stick

  • ½ onion (chopped)

  • 1 small potato (optional, cubed)

  • 500ml vegetable stock

  • 1 tbsp olive oil

  • ½ tsp paprika or cumin

  • Salt & black pepper

Instructions

  1. Heat olive oil and cook onion, carrot, and celery.

  2. Add lentils, spices, and stock.

  3. Simmer for 25–30 minutes until lentils are soft.

  4. Season and serve warm.
