Baked Aubergine with Tomato & Feta

A warm, Mediterranean-inspired dish that feels comforting yet light.

Ingredients (1–2 servings)

  • 1 aubergine (halved lengthwise)

Topping:

  • 1 small tomato (chopped)

  • 30g feta cheese

  • 1 tbsp olive oil

  • ½ tsp oregano or mixed herbs

  • Salt & black pepper

Instructions

  1. Preheat oven to 180–200°C.

  2. Score the aubergine and drizzle with olive oil.

  3. Bake for 20 minutes until soft.

  4. Add tomato, feta, and herbs on top.

  5. Bake for another 10–15 minutes.
