Lemon Herb Chicken & Vegetable Tray Bake

A simple, comforting tray bake with fresh herbs and roasted vegetables.
Easy to prepare, full of flavour, and perfect for a nourishing, grounding meal.

Ingredients (1–2 servings)

Protein:

  • 1–2 chicken breasts or thighs

Vegetables:

  • 2 small potatoes (or sweet potatoes), chopped

  • 2 carrots, sliced

  • ½ courgette or pepper

Flavour:

  • 1 tbsp olive oil

  • Juice of ½ lemon

  • 1 tsp dried oregano or mixed herbs

  • 1 garlic clove (optional)

  • Salt & black pepper

👩‍🍳 Instructions

  1. Preheat oven to 200°C.

  2. Place all vegetables in a baking tray.

  3. Add chicken on top.

  4. Drizzle with olive oil and lemon juice.

  5. Sprinkle herbs, garlic, salt, and pepper.

  6. Roast for 30–35 minutes until chicken is cooked and vegetables are tender.
