Creamy Lentil & Vegetable Soup

Ingredients (2 servings)

  • 100g red lentils (rinsed)

  • 1 carrot (chopped)

  • 1 celery stick (chopped)

  • ½ onion (chopped)

  • 1 garlic clove (optional)

  • 500ml vegetable or chicken stock

  • 1 tbsp olive oil

  • ½ tsp turmeric or cumin (optional)

  • Salt & black pepper

👩‍🍳 Instructions

  1. Heat olive oil in a pot and sauté onion, carrot, celery, and garlic for 5 minutes.

  2. Add lentils, spices, and stock.

  3. Simmer for 20–25 minutes until lentils are soft.

  4. Blend slightly (optional) for a creamier texture.

  5. Season to taste and serve warm.
