Creamy Lentil & Vegetable Soup

Ingredients (2 servings)
100g red lentils (rinsed)
1 carrot (chopped)
1 celery stick (chopped)
½ onion (chopped)
1 garlic clove (optional)
500ml vegetable or chicken stock
1 tbsp olive oil
½ tsp turmeric or cumin (optional)
Salt & black pepper
👩🍳 Instructions
Heat olive oil in a pot and sauté onion, carrot, celery, and garlic for 5 minutes.
Add lentils, spices, and stock.
Simmer for 20–25 minutes until lentils are soft.
Blend slightly (optional) for a creamier texture.
Season to taste and serve warm.
