Mediterranean Stuffed Peppers

A warm, colourful dish packed with Mediterranean flavours.

Ingredients (2 servings)

  • 2 bell peppers (halved and deseeded)

Filling:

  • 80g cooked quinoa (or rice)

  • Β½ can chickpeas (rinsed)

  • 1 small tomato (chopped)

  • 30g feta cheese

  • 1 tbsp olive oil

  • Β½ tsp oregano or mixed herbs

  • Salt & black pepper

  1. Preheat oven to 180Β°C.

  2. Place pepper halves on a baking tray.

  3. Mix all filling ingredients in a bowl.

  4. Stuff the peppers with the mixture.

  5. Bake for 20–25 minutes until peppers are soft.
