Mediterranean Stuffed Peppers
A warm, colourful dish packed with Mediterranean flavours.
Simple, nourishing, and perfect when you want something satisfying but still light.
Ingredients (2 servings)
2 bell peppers (halved and deseeded)
Filling:
80g cooked quinoa (or rice)
Β½ can chickpeas (rinsed)
1 small tomato (chopped)
30g feta cheese
1 tbsp olive oil
Β½ tsp oregano or mixed herbs
Salt & black pepper

Preheat oven to 180Β°C.
Place pepper halves on a baking tray.
Mix all filling ingredients in a bowl.
Stuff the peppers with the mixture.
Bake for 20β25 minutes until peppers are soft.
